The new cooking thread

Kind of Paleo-Ketogenic - just meat, fish, eggs, nuts, vegetables and plenty of fats. .
what are fats? like, what is an example of a fat that you eat? is butter a fat? but you wouldn't eat that on its own (although I did know someone once who would eat butter sticks and when I looked at her like she was crazy she accused me of not ever having had good butter). are there any fats you would eat on their own?

High-fat foods like avocado, nuts, fatty meat (contrary to all the scare stories, saturated fat is good for you and does not cause heart disease). I don't do dairy, but if I did you could include butter, cheese, full fat milk. Then there are cooking oils like coconut oil (super healthy), lard and olive oil - use liberally. You can actually take olive oil and coconut oil off the spoon, it's very beneficial.

Haha, the answer is I don't! I make a lot of things for my kids that I don't eat but I draw the line at custard and its wobbly, goopy friends. TAT, I cannot sit next to someone else eating custard without heaving, so I'm never going to manage to make the stuff  And believe me, I've put some effort in, I've even had aversion therapy :(
Wow! Aversion therapy for custard? At least you know that you tried everything! I best stop talking about all the “wobbly, goopy” stuff or be prepared for its adverse effects on you. I’m still trying to get my head around a life without custard though.

No matter how good the butter, eating sticks if it seems a tad extreme. It kind of makes me shudder to think of it and I think most things are better with butter.

Actually, I can eat butter straight from the dish. I would probably gag if I had to eat a whole stick of it, but it is pretty delicious.

I can't say it's blighted my life as I love cream and yoghurt - and at the moment, substituting both of those for thick coconut milk is a yummy compromise. I'd be much more sad to have to live without onions :lbf:

You and your onions! I’m glad you’ve made allowances for cream and yogurt so it’s not a total loss.

Makes me think of the butter eating contest in Weeds. There is such a thing as too much of a good thing.

Ewwww, I find things like that really hard to watch, even when it's just pretend! I find the whole idea of an eating contest quite disturbing, are they primarily a US thing? We don't seem to do that here.

I’m unable to speak for the rest of the world but eating contests do seem to be popular here. Not sure what the attraction is. Seems like people are always going beyond their limits and then losing in a big way.

I don't think we have them in Canada, at least I never hear of them happening anywhere. aren't they big in some Asian countries, maybe japan? I find them grotesque. I mean I've done my share of binging--though obviously nothing like that--and even then I cant help but feel there's something so wrong about using the body in that way, as a sack to cram food into. it's body abuse, really.

how apros pos, I was just about to ask peppermint if cheese omelets were okay! peppermint??
Oh God, now I'm confused! Okay in what sense? Decent nutritional content: tick. High fat content: tick. Paleo: x (dairy not allowed) Ketogenic: tick (all fats, including deiry, encouraged). Then there are people who think nobody should eat dairy because it's stuffed full of antibiotics and contains enough growth hormones to turn a little calf into a ton-weight cow. See what you've unleashed? Being nutritionally-conscious has become so complicated!

it is! really I just want to know what will make my bulbous salutations go away! my finger swelling has gone down, and my eyelids have been okay, but my nose! god, peppermint, my nose! it's been like 3 weeks with no let up! I'm a bit worried it's going to stay that way, or that the skin will become stretched out! so I guess, inspired by realitybites comments about her aunts edema going away (although I don't think this problem with my nose is edema but rather an overreaction of the blood vessels (it's not red or anything though)), I thought I might just get on board with one of these crazy diet thingies, and felt the immediate need to know if omelets would be okay for that--that is, okay for me. because, as it happens, i am a girl who likes her omelets, even if I never eat them because I'm too lazy to make them, and if when I do make them I really just microwave them, because I have that little quality of life, and I thought to myself "I could do that IF I could eat omelets". actually, though, I'm starting to wonder if dairy might just be the culprit in my case, seeing as my bulbous salutation of a nose came on during a rigorous bout of ice cream eating which lasted about 2 weeks and saw me go through several cartons of the stuff (and before that I rarely ate it-- except for the odd time I would buy a thing of haagen dasz--or any dairy really with the exception of chocolate and small amounts of cheese). what do you think, peppermint, could it be a reaction to ice cream?

It could be allergy, or some other problem like Candida - but that in itself can set off allergic reactions (eg reacting to yeast/moulds, but also other foods), so it's quite complicated. The fact that it flared up when you ate all the ice cream is interesting, but because it contains large amounts of both sugar and dairy it doesn't really help to narrow down the culprit! And of course it could even be something else in the ice-cream.

There are several things you could do.

You could simply cut out all dairy, which is a really common allergen so it's a good place to start. Stick to it strictly for a few weeks (no cheating, or you will never properly know) - including butter and cheese - and see what happens. If it gets better, that's probably your answer.

Or you could try taking a natural anti-fungal like Oil of Oregano and see what that does. If you get die-off within a couple of days (fatigue, headache, skin rashes/spots - and possibly a temporary worsening of the swelling) - then it's likely Candida. BUT... you could also have allergies as well, because the two often go hand in hand. But an anti-Candida diet could be used to address that. For what it's worth, when I had terrible Candida I had something weird going on with the skin of one eyelid, and that one eye would water constantly. Those little bastards can wreak all kinds of havoc.

Or... if you're a more 'all or nothing' person, you could dive in and do a Paleo-Ketogenic diet which cuts out dairy, sugar, grains, most fruit and all the other common problematic foods like legumes. In other words, you just eat meat, fish, eggs, nuts, and lots of vegetables + plenty of fat for energy. Then if you start to improve, you could add back in one food at a time and see what it does. That would cover potential allergens + underlying causes of Candida both at the same time.

Whatever you do, omelettes are probably okay (as long as you don't add milk or cheese). Eggs can be allergenic, but you have to start somewhere and you can't cut everything out before you've even begun :)

This stuff is quite complicated and I freely admit I'm not an expert - I just know about the things which have affected me. The best advice I could give would be: do something! You kind of have to become a bit of a detective. Change something, be rigorous, note what happens, read about it, and use that to decide what to do next.

Here is a Ketogenic friendly trick using an air fryer. Season 2 large chicken quarters. Place in air fryer on highest setting. Cook 10 minutes. Turn. Cook another ten minutes or until safe temp (always use thermometer when cooking meat. Time is not accurate.) Rest ten minutes. Remove chicken. Plate and eat. Skin will be golden and crispy with the fat rendered.

Strain fat from fryer. Chill. Use this wonderful schmaltz (chicken fat) for frying, sautéing etc. in a future dish.

Hi Pepperoni ,( you call me Scotty so fairs fair) Some sense in this but beware Gallstones with high fat diet they can block your bile duct and can lead to pancreatic infection.
Hi Scotty, thanks for the tip. I actually don't believe this to be the case. When you eat more fat it produces more bile, which flushes the bile ducts out regularly and gives stones less time to form. I think the exception might be if you already have gallstones (which can result from a low-fat diet), which get dislodged by a sudden high fat diet so cause temporary pain.

There has been an erroneous belief that 'fat is bad' for 50 years or more which has misinformed health advice - quite an interesting story. There were two scientists in the 60s with competing theories - Ancel Keys in the US, who hypothesised that saturated fat causes cardiovascular disease; and John Yudkin, a British guy who said sugar was to blame, and accurately predicted our current epidemic of heart disease, diabetes, cancer, obesity etc. (He wrote a book called Pure White and Deadly about this). Anyway, Ancel Keys won the Theory War and they buried poor John Yudkin - his career was finished. Only now it's becoming clear that Yudkin was correct and Keys cherry-picked his statistics to skew the results. And of course we're all paying the price.

Apologies for the essay, but I am quite into this stuff! Anyway, I appreciate the concern but I am overseen by a proper doctor who specialises in this area.

Sure but someone who doesn't know they have gallstones suddenly starts eating V high fat diet they may be in serious trouble. Moderation is the key. Gallstones can come also from fasting as you say large swirling pools of bile can make stones as well as cholesterol often linked to high fat. Starches are good if you eat the most nutritional and fibre packed versions. No food group is essentially bad but over eating and faddy diets are.
